This time of year can get very busy with back to school happening. It always helps if you have some easy recipes to fall back on for those days that you just don’t have the time to spend in the kitchen.
I don’t make many soups and stews in the summer but lately I’ve been so busy that I’ve been adding some of our favorites back into the rotation. One of my favorite crock pot recipes is a New Mexican Stew from Karina Allrich at Gluten Free Goddess. It’s a great fall and winter dish and a family favorite in my house.
Another easy meal that I usually make once a week is pasta with meatballs. I don’t have a recipe but it usually consists of a jar of pasta sauce to which I add some blended veggies (I steam and blend up various veggies like kale or squash and then freeze in an ice cube tray) and ground chicken meatballs. I just mix the ground meat with some salt, pepper, onion and garlic powder and drop it by spoonful into the simmering pasta sauce. Let it simmer until the meat is cooked through, boil some noodles or sauté some zucchini and you’re done!
And of course you can always pick up a rotisserie chicken and throw together a salad or steam some veggies and dinner is ready! It doesn’t get much easier than that
